Eat Good - Look Great

Spring is certainly in the air and everybody wants to go out and play.  Before you know it, it will be swimuit weather.  If you're like us, always trying to lose a pound or two, and always looking for delicious, healthy recipes, you will certainly find some in Day in the Country Cookbook.  Although the book contains many recipes for what we like to call "celebration food,",that is, food that's meant to be shared, it also has several lighter options with fantastic flavors.

If your looking for appetizers that are easy on the waistline, our recipe for Black Bean Salsa, p. 15, is completely fat free but packed with flavor.  Marinated Shrimp, p. 30, has only 74 calories and 2 grams of fat per serving and is loaded with tasty veggies like hearts of palm, olives, capers, peppers, artichoke hearts and baby corn.

A chilled soup that tastes like a big bite of summer is our Garden Fresh Gazpacho, p. 49.  It's super easy to make and everybody loves it.  You'll also want to try the Skinny Shellfish Gumbo, p. 57.  In this recipe the roux is made by browning the flour in the oven, so the oil is omitted, but not the flavor.

For a new take on salad, Jicama Slaw, p. 71, combines fresh jalapeno pepper, orange and lime zest, fresh cilantro and a touch of honey with the jicama to make a slaw bursting with bright flavors.

For the main course, Fiery Chicken Breasts with Mango Salsa, p. 109, will become your new favorite grill recipe this spring.  If you like the sweet/hot combination, this dish serves it up in a delicious low fat, low sugar way.  Or if you're cooking indoors, try the Seared Pepper Lime Crusted Ahi Tuna, p. 119.  This simple recipe only takes a few minutes to prepare, so it's great for a weeknight supper that really satisfies.

Sugar Snap Peas with Ginger, p. 148, combines fresh garlic, ginger and seame seeds for a quick side dish that brings out the wonderful garden flavor of the sugar snap peas.

If you're looking for a great fat free dessert, Chocolate Cinnamon Angel Food Cake, p. 193, is made with egg whites for a light, fluffy cake that will disappear in a flash.

Of course this is only a sample of all the great stuff in our cookbook.  We have lots to talk about and food is our favorite subject.
